Smoking isn’t all bad.
The local Sushi joint, (owned and staffed by Japanese) serves a Nigiri with smoked Eel on top. They call it Unagi Don, It is absolutely great.
That said; Sashimi is still my favourite Japanese. meal.
If I can afford in a good Japanese Restaurant, that is.

@Pete 0703. Few years ago now. I buy it regularly. But yes, it was the first time.
Usually have to ask for it specially. ‘Cos most Aussies won’t eat eel. Took a Maori mate with me once, he loved it. Maoris favourite foods, include eels.
Oh. As a sushi that is. I always thought Unagi Don was served as a rice meal with raw eel and a sauce.

Unagi is not eaten raw, even in sushi.
It is first grilled over a flame.
At least, that’s how they eat in in Japan.
If other peoples eat raw eel, I don’t know about it.
Unfortunately, REAL Japanese eel is hard to get and very expensive, even in Japan. Both there and in other countries, most eel served is the cheaper version from China. A most inferior product, IMHO.
Coz I can definitely taste the difference.
After the passing of Mao and Deng, smoking is not patriotic anymore.
Funny, I see a lot of soldiers smoking in various photographs, as a form of stress relief.
