When I was a teenager, this business in Junction Road Clayfield used to make a Rum Calypso Cheesecake. It was a baked cheesecake with a chocolate shell.
It made a great Sunday lunch. I used to put in the freezer for a few hours Then put it on the table with some OP rum on top. Then light it and serve. Enjoy it with glasses of Rum Liqueur or Sabra.
Just don’t get your glasses of Rum Liqueur too close to the flames, or you may create Armageddon.
